A Healthier Me: Home Cooking

I come from a family of foodies. My Grandma loved to cook large meal and have everyone come over. My mom enjoys recreating meals in a healthier way. And, my dad loves to create traditional Mexican meals from scratch and after retiring, he and my uncle even began their own taco business. Having taqueros in the family is a blessing and a curse; you get used to a certain quality of tacos and eat lots and lots of tacos! 

Before applying to college I even looked into culinary school, but was never confident enough to apply. Instead I focused on cooking at home as often as I could. Being that I am not a big fan of going out to buy food everyday so when I started college I began to meal prep. Since then I have done my best to keep Sundays as meal prep and Netflix (or football) day with the Hubs.

A few weeks back I tried gnocchi for the first time while at dinner with some friends at Carthay’s Circle in Disney’s California Adventure and wanted to recreate it.

Inspiration: Parmesan Potato Gnocchi

After doing some research I was able to find some pre cooked cauliflower gnocchi at Trader Joe’s. I am definitely a big fan of making meals easier and typically include a pre cooked ingredients in each meal.

Gnocchi with Chorizo

Ingredients:

  • 2 packs (12 oz each) Pre cooked gnocchi – I used cauliflower gnocchi
  • 6-8 oz Chorizo – I used soy chorizo
  • 1 onion diced
  • 1 bell pepper diced
  • 1 can (15 oz) white northern beans
  • 1 can (15 oz) corn
  • 2 tbsp minced garlic
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 1 cup veggie (or chicken/beef) broth
  • Shredded cheese for garnish

Directions:

Preheat pan with olive oil and cook chorizo until completely separated.  

In a large pan/skillet heat up the butter and slightly brown the garlic. Add in onion, bell pepper and corn. Let veggies saute but stay crunchy. Add in beans and gnocchi. Mix all ingredients well.

Pour broth and let simmer until gnocchi is cooked. Lastly, toss in chorizo and mix well. Serve with shredded cheese and enjoy!

Quick Tip:

After cooking this dish I realized I should have pan seared the gnocchi to get them golden before mixing with the veggies. My first attempt had great flavor but really needed a little more crunch. If you try this tag me on Instagram @cafewithmichelle !
